Breakfast Casserole

The concept of a breakfast casserole usually grosses me out, but seriously - this was awesome!

BREAKFAST CASSEROLE

1/2 c. onion, chopped
1/2 c. green peppers
2 c. cubed ham, bacon or sausage (I purchased Jimmy Dean's precooked sausage, yummy!)
1 c. grated Cheddar cheese
1 doz. eggs, beaten
1 c. milk
1 (10 oz.) pkg. thawed hash browns
1 tsp. salt
1/2 tsp. pepper

Brown onion and green pepper together. Mix all ingredients together and pour into a 9x13 greased pan. Top with more grated cheese. Bake 30 minutes or until set at 350 degrees. Serves 10-12.

Delicious Chicken

3 tablespoons butter or margarine, melted

3 cups potatoes, peels and thinly sliced
1 package (16 ounces) frozen corn
2 teaspoons salt, divided
2 tsp basil, divided (I used a mixed Italian spice)
1 cup graham cracker crumbs
1/2 cup butter or margarine, melted
4 to 6 boneless, skinless chicken breasts

Preheat oven to 375 degrees

Pour 3 tablespoons melted butter in the bottom of a 9x13-inch pan. Combine potatoes and corn in the pan, and then sprinkle with 1 tsp salt and tsp basil (or Italian spice mix).

In a small bowl, combine cracker crumbs and remaining salt and basil. Transfer mixture to a plate. Dip chicken in 1/3 cup melted butter then roll in crumb mixture, coating completely. Place chicken over vegetables. Cover and bake 60-75 minutes, or until chicken is done and vegetables are tender. Remove from oven, uncover and bake 10 minutes more to brown chicken. Makes 4-6 servings.

Surprisingly delicious. Aaron's favorite part is the potatoes. You wouldn't think graham cracker crumbs would work, but they do.

Broccoli Chicken Alfredo Lasagna

INGREDIENTS (Nutrition)

  • 1/2 (16 ounce) package lasagna noodles
  • 1/2 (10 ounce) package frozen chopped broccoli
  • 1-1/2 cooked, boneless chicken breast halves, diced
  • 1 (16 ounce) jar Alfredo-style pasta sauce
  • 2 cups shredded mozzarella cheese
  • 2 cups ricotta cheese
  • salt and pepper to taste
  1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Cook broccoli according to package directions; drain.
  2. In a medium bowl, combine chicken and one jar of alfredo sauce, stir together.  Add ricotta and drained, cooked broccoli, and stir.
  3. In a 9 x 13 baking dish, layer first with some alfredo so noodles don't stick, place one layer of lasagna noodles, edges overlapping. Pour chicken mixture over noodle layer and spread evenly. Sprinkle 1 cup of shredded mozzarella over chicken mixture. Top with another layer of noodles. Sprinkle another cup of mozzarella over sauce, lay on the final noodle layer and top with remaining 2 cups of mozzarella and salt and pepper to taste. Bake 50 to 60 minutes, until top is brown and bubbly.
